Hot and Sour Soup (酸辣湯)

Flavorful Hot and Sour Soup

Serves: 4

Ingredients:

  • 5 cups water
  • 1 cup tofu, diced
  • 1.5 cups bamboo shoots, sliced
  • 1 tablespoon chicken bouillon
  • 1/4 cup soy sauce
  • 1 tablespoon Sriracha sauce (adjust to taste)
  • 4 tablespoons cornstarch
  • 4 tablespoons water
  • 3 eggs, beaten
  • 1/4 cup rice vinegar
  • 1 teaspoon white pepper powder
  • 1 tablespoon sesame oil
  • Chopped scallions, for garnish

Instructions:

  1. In a large pot, bring 5 cups of water to a boil.
  2. Add the diced tofu and sliced bamboo shoots to the boiling water.
  3. Stir in the chicken bouillon, soy sauce, and Sriracha sauce. Let it simmer for a few minutes to allow the flavors to combine.
  4. In a small bowl, mix the cornstarch and water together to create a slurry.
  5. Slowly pour the cornstarch slurry into the soup while stirring continuously. This will help thicken the soup.
  6. Gradually drizzle the beaten eggs into the soup while stirring gently. The eggs will cook and form ribbons.
  7. Stir in the rice vinegar and white pepper powder. Adjust the seasonings to your taste preferences.
  8. Remove the pot from the heat and drizzle the sesame oil over the soup. Give it a final stir.
  9. Ladle the hot and sour soup into bowls and garnish with chopped scallions.
  10. Serve the flavorful hot and sour soup hot and enjoy!

Notes:

  • You can add additional ingredients to the soup, such as sliced mushrooms, shredded chicken, or shrimp, for added variety and flavor.
  • Adjust the amount of Sriracha sauce according to your spice preference.
  • Feel free to garnish the soup with crispy fried noodles or toasted sesame seeds for added texture and presentation.
