Savory Shrimp Fried Rice

Ingredients:
- 6 large shrimp, peeled and deveined
- Pinch of salt
- Pinch of white pepper powder
- 1 teaspoon cornstarch
- 1 teaspoon vegetable oil
- 3 eggs, scrambled
- 1/2 yellow onion, finely chopped
- 1/2 tablespoon shredded ginger
- 2 tablespoons vegetable oil, divided
- 2 cups cooked rice (preferably cooled or day-old)
- 1 teaspoon salt
- Pinch of white pepper powder
- 2 tablespoons frozen mixed vegetables
- 1 teaspoon sesame oil
Instructions:
- Season the shrimp with a pinch of salt, white pepper powder, cornstarch, and vegetable oil. Set aside for a few minutes.
- In a medium-sized pan, scramble the eggs and set them aside.
- Heat 1 teaspoon of vegetable oil in a pan over medium heat. Add the shredded ginger and sauté for a moment until fragrant.
- Add the seasoned shrimp to the pan and cook for 2-3 minutes until they are cooked through. Remove the shrimp from the pan and set aside.
- In the same pan, add 1 tablespoon of vegetable oil and the chopped yellow onion. Sauté until the onion turns golden brown.
- Add the scrambled eggs to the pan, followed by the cooked rice. Mix the ingredients together, breaking up any clumps of rice and ensuring they are evenly coated with the egg.
- Cook the rice mixture until it dries up slightly, then season with salt and a pinch of white pepper powder.
- Add the frozen mixed vegetables and cooked shrimp to the pan. Stir-fry for another minute to warm them through.
- Finish the dish by drizzling sesame oil over the fried rice and give it a final toss to incorporate the flavors.
- Serve the savory shrimp fried rice hot and enjoy!
