Hearty Braised Beef Noodle Soup

Ingredients:
- 3 pounds beef pot roast, cut into large pieces
- 4 cloves garlic, minced
- 3 large slices of ginger
- 4 star anise
- 2 tablespoons whole peppercorns
- 2 bay leaves
- 1 cinnamon stick
- 1 yellow onion, cut into chunks
- 2 tablespoons soy sauce
- 2 tablespoons cooking wine
- 10 cups water
- 2 tablespoons beef bouillon
- 1 teaspoon salt
- 1 teaspoon white pepper powder
- Chopped scallions, for garnish
- Sliced jalapeño pepper, for garnish
- Cooked noodles of your choice
Instructions:
- In a large cooking pot over medium heat, add the minced garlic, ginger slices, star anise, peppercorns, bay leaves, cinnamon stick, and yellow onion. Cook for about a minute until fragrant.
- Add the beef to the pot and cook until slightly browned, around 12-15 minutes.
- Pour in the soy sauce and cooking wine, and stir well to coat the beef.
- Add the water, beef bouillon, salt, and white pepper powder to the pot. Stir to combine all the ingredients.
- Close the lid and reduce the heat to low. Let the soup simmer for 1.5 hours, allowing the flavors to meld and the beef to become tender.
- Once the cooking time is complete, remove the ginger, star anise, bay leaves, and cinnamon stick from the broth. Discard these spices.
- Cook the noodles according to the package instructions, then drain.
- To serve, place a portion of cooked noodles in each bowl. Ladle the hot braised beef soup over the noodles.
- Garnish with chopped scallions and sliced jalapeño peppers for an extra kick.
- Serve the hearty braised beef noodle soup immediately and enjoy the comforting flavors.

- You can customize this dish by adding your favorite vegetables, such as bok choy or bean sprouts, to the soup during the last few minutes of cooking.
