Hearty Braised Beef Noodle Soup

Ingredients:

  • 3 pounds beef pot roast, cut into large pieces
  • 4 cloves garlic, minced
  • 3 large slices of ginger
  • 4 star anise
  • 2 tablespoons whole peppercorns
  • 2 bay leaves
  • 1 cinnamon stick
  • 1 yellow onion, cut into chunks
  • 2 tablespoons soy sauce
  • 2 tablespoons cooking wine
  • 10 cups water
  • 2 tablespoons beef bouillon
  • 1 teaspoon salt
  • 1 teaspoon white pepper powder
  • Chopped scallions, for garnish
  • Sliced jalapeño pepper, for garnish
  • Cooked noodles of your choice

Instructions:

  1. In a large cooking pot over medium heat, add the minced garlic, ginger slices, star anise, peppercorns, bay leaves, cinnamon stick, and yellow onion. Cook for about a minute until fragrant.
  2. Add the beef to the pot and cook until slightly browned, around 12-15 minutes.
  3. Pour in the soy sauce and cooking wine, and stir well to coat the beef.
  4. Add the water, beef bouillon, salt, and white pepper powder to the pot. Stir to combine all the ingredients.
  5. Close the lid and reduce the heat to low. Let the soup simmer for 1.5 hours, allowing the flavors to meld and the beef to become tender.
  6. Once the cooking time is complete, remove the ginger, star anise, bay leaves, and cinnamon stick from the broth. Discard these spices.
  7. Cook the noodles according to the package instructions, then drain.
  8. To serve, place a portion of cooked noodles in each bowl. Ladle the hot braised beef soup over the noodles.
  9. Garnish with chopped scallions and sliced jalapeño peppers for an extra kick.
  10. Serve the hearty braised beef noodle soup immediately and enjoy the comforting flavors.

Notes:

  • You can customize this dish by adding your favorite vegetables, such as bok choy or bean sprouts, to the soup during the last few minutes of cooking.
  • Feel free to adjust the seasoning to suit your taste preferences. Add more soy sauce or salt if desired.
  • This soup tastes even better the next day as the flavors continue to develop. Store any leftovers in the refrigerator and reheat before serving.
