Peanut Butter Noodles (花生醬拌麵)


Creamy Peanut Butter Noodles with Fresh Cucumber

Ingredients:

  • 8 ounces fresh flour noodles
  • 1 cup cucumber, cut into strips

For the sauce:

  • 2 tablespoons peanut butter
  • 2 tablespoons water
  • 1 tablespoon soy sauce
  • 1 tablespoon vinegar
  • 1 tablespoon sugar
  • Pinch of salt and white pepper
  • 1 tablespoon sesame oil
  • Additional water, as needed

Instructions:

  1. Pre-cook the fresh flour noodles by boiling them in hot water for 6 minutes. Drain the noodles and rinse them with cold water. Set aside.
  2. Cut the cucumber into strips and set aside.
  3. In a large bowl, mix together the peanut butter, water, soy sauce, vinegar, sugar, salt, white pepper, and sesame oil. Stir well until the ingredients are combined.
  4. If the sauce is too thick, gradually add more water until you achieve your desired consistency. The sauce should be creamy and easily coat the noodles.
  5. Add the cooked noodles to the sauce in the bowl and toss well to ensure the noodles are fully coated.
  6. Place the cut cucumber strips on top of the noodles for a refreshing crunch.
  7. Serve the peanut butter noodles with fresh cucumber strips immediately.

Notes:

  • You can customize this dish by adding other toppings such as shredded carrots, sliced scallions, or chopped peanuts for extra texture and flavor.
  • Feel free to adjust the sauce ingredients to suit your taste preferences. Add more soy sauce for saltiness, more sugar for sweetness, or more vinegar for tanginess.
  • If you prefer a spicier version, you can add a dash of chili sauce or a sprinkle of red pepper flakes to the sauce.
  • This dish can be served chilled or at room temperature. It makes a great picnic or potluck option as it can be prepared ahead of time and served cold.
