Creamy Peanut Butter Noodles with Fresh Cucumber

Ingredients:
- 8 ounces fresh flour noodles
- 1 cup cucumber, cut into strips
For the sauce:
- 2 tablespoons peanut butter
- 2 tablespoons water
- 1 tablespoon soy sauce
- 1 tablespoon vinegar
- 1 tablespoon sugar
- Pinch of salt and white pepper
- 1 tablespoon sesame oil
- Additional water, as needed
Instructions:
- Pre-cook the fresh flour noodles by boiling them in hot water for 6 minutes. Drain the noodles and rinse them with cold water. Set aside.
- Cut the cucumber into strips and set aside.
- In a large bowl, mix together the peanut butter, water, soy sauce, vinegar, sugar, salt, white pepper, and sesame oil. Stir well until the ingredients are combined.
- If the sauce is too thick, gradually add more water until you achieve your desired consistency. The sauce should be creamy and easily coat the noodles.
- Add the cooked noodles to the sauce in the bowl and toss well to ensure the noodles are fully coated.
- Place the cut cucumber strips on top of the noodles for a refreshing crunch.
- Serve the peanut butter noodles with fresh cucumber strips immediately.

- You can customize this dish by adding other toppings such as shredded carrots, sliced scallions, or chopped peanuts for extra texture and flavor.
