Red Oil Wonton (紅油炒手)

Delicious and Flavorful Wontons with Spicy Peanuts

Ingredients:

For the Wontons:

  • 1.5 pounds ground pork
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon minced ginger
  • 1 teaspoon white pepper powder
  • 4 tablespoons chicken broth
  • 2 tablespoons sesame oil
  • Ready-made wonton wrappers (approximately 1 tablespoon of ground pork per wrapper)

For the Spicy Peanut Sauce:

  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 tablespoon peanut butter
  • 1 tablespoon sugar
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons red chili oil
  • 2 tablespoons sesame oil

For Garnish:

  • 4 tablespoons red oil mix (see Spicy Peanut Sauce)
  • 1 tablespoon chopped scallions
  • 2 tablespoons chopped peanuts

Instructions:

  1. Marinate the ground pork: In a mixing bowl, combine the ground pork, soy sauce, oyster sauce, minced ginger, white pepper powder, chicken broth, and sesame oil. Mix well to ensure all the ingredients are evenly incorporated. Cover the bowl and let it marinate in the refrigerator for a few hours to enhance the flavors.
  2. Assemble the wontons: Take a wonton wrapper and place approximately 1 tablespoon of the marinated ground pork in the center. Moisten the edges of the wrapper with water and fold it diagonally to create a triangle. Press the edges firmly to seal the wonton. Repeat this process until all the wrappers are filled.
  3. Cook the wontons: Bring a large pot of water to a boil. Carefully add the wontons to the boiling water and cook for 2 to 3 minutes, or until they float to the surface and are cooked through. Remove the cooked wontons from the water using a slotted spoon and set aside.
  4. Prepare the Spicy Peanut Sauce: In a small bowl, combine the minced garlic, minced ginger, peanut butter, sugar, soy sauce, rice vinegar, red chili oil, and sesame oil. Stir well until the ingredients are thoroughly combined into a smooth sauce.
  5. Serve: Place the cooked wontons on a serving platter. Drizzle approximately 1 tablespoon of the red oil mix from the Spicy Peanut Sauce over the wontons. Sprinkle chopped scallions and chopped peanuts on top for added freshness and crunch.
  6. Enjoy: Serve the wontons with the spicy peanut sauce on the side for dipping. These flavorful and mouthwatering wontons are perfect as an appetizer or as part of a main course. Your guests will love the combination of savory pork, spicy sauce, and delightful garnishes.
