Shrimp Pan-Fried Noodles (蝦球兩面黃)

    Crispy Golden Shrimp Delights with Pan-Seared Noodles

    Preparation time: 15 minutes Cooking time: 20 minutes Serves: 4

    Ingredients:

    • 1 pound large shrimp, peeled and deveined
    • Pinch of salt
    • Pinch of white pepper powder
    • 1/2 tablespoon cornstarch
    • 1 tablespoon vegetable oil

    For the noodles:

    • 8 ounces dry egg noodles
    • 2 tablespoons vegetable oil

    For the sauce:

    • 1 tablespoon vegetable oil
    • 2 cloves garlic, minced
    • Assorted cut vegetables (such as bell peppers, carrots, and snow peas)
    • 1 tablespoon soy sauce
    • 1 tablespoon oyster sauce
    • 1 teaspoon sugar
    • 1.5 cups chicken broth
    • 1 cup hot water
    • 1 tablespoon cornstarch mixed with water
    • 1 teaspoon sesame oil

    Instructions:

    1. In a bowl, marinate the shrimp with a pinch of salt, white pepper powder, 1/2 tablespoon of cornstarch, and 1 tablespoon of vegetable oil. Set aside.
    2. Cook the dry egg noodles in boiling water according to package instructions until they are soft. Rinse with cold water, drain, and set aside.
    3. Heat a medium-sized pan over medium heat with 2 tablespoons of vegetable oil. Add the cooked noodles and cook until crispy and golden brown on each side. Remove the noodles from the pan, drain the excess oil, and set aside.
    4. In the same pan, heat 1 tablespoon of vegetable oil and minced garlic over medium heat. Add the marinated shrimp and cook for a few minutes until they are pink and cooked through. Remove the shrimp from the pan and set aside.
    5. In the same pan, add the assorted cut vegetables, soy sauce, oyster sauce, sugar, chicken broth, and hot water. Cook for a few minutes until the vegetables are tender-crisp.
    6. Return the cooked shrimp and a few baby corns to the pan. Mix 1 tablespoon of cornstarch with water to make a slurry and add it to the pan to thicken the sauce. Stir in 1 teaspoon of sesame oil.
    7. To serve, place the shrimp and vegetables on top of the crispy noodles.
    8. Garnish with chopped green onions or cilantro, if desired. Serve the crispy golden shrimp delights immediately and enjoy!

    Notes:

    • Feel free to add more vegetables or adjust the sauce ingredients to your preference.
    • For extra heat, you can add a dash of chili flakes or a sliced chili pepper to the sauce.
